Broccoli Soup Recipe:
(Roughly, I don't measure unless I am baking). ;-)

Ingredients:
1 cup chopped yellow onion, saute'ed in olive oil
3 T flour
1/2 C low-fat plain yogurt (make sure there's not a lot of sugar or artificial sweetener in it -it ruins the flavor of the soup) OR you can use the same amount of low fat or fat free sour cream
4 cups water seasoned with vegetarian bouillon (Better Than Bouillon is my favorite brand)
2 cups diced potatoes (I used Fingerlings because of their nutty flavor)
4 C broccoli, trimmed & cut into 1 inch pieces
2 T dried Italian seasoning or herbes de provence
season with Kosher salt and white pepper to taste

Garnish: 1 slice Alpine Lace low fat or fat free cheese of your choice per bowl of soup.

Directions: Saute your onions in olive oil if you haven't already; Add the flour. Once it's mixed in remove from heat and add yogurt or sour cream and set aside.

Put the rest of the ingredients together (except the cheese) and cook on low to medium heat for about 30-40 minutes. Turn heat to low and add your onion paste mix. Simmer on low for another 5 minutes or so. Garnish each bowl of soup with a slice of low fat cheese cut into strips.

The soup seems wrong without a giant loaf of crusty hot baked sourdough, but we're dieting so we had a piece of whole wheat toast. :-) Enjoy!
Budget tip: Always make this when broccoli is in season, but can be made with frozen broc. Also, asparagus can be substituted, just add more white pepper; puree' the soup; and reserve a few asparagus sprigs to garnish and omit the cheese.

We use Y.S. Organic Bee Farms 100% Certified Organic Honey. The honey is from Brazil (which I didn't know until checking the label to write this comment) but I have to say I am impressed. The farm is owned by a company in Illinois and certified organic by the Organic Crop Improvement Association out of Lincoln, NE. This is "unheated true raw state unprocessed" honey. It is creamy and sweet, but not over-powering. I absolutely love this stuff. We get it from one of our local organic farmers. She told me that she looked long and hard and tried many different varieties before picking this one to sell at her spot at the farmer's market. I think she made the right choice.
you can check out their page for more information (pertinent if you're in the PeeDee Region of SC)

I guess I'm a bitchy bitch. I look for every excuse not to go to the gym. But I still manage to get there 2-3 days a week. Fortunately I work at a university and the gym is in my building. I joined the Fitness Challenge. I even had a free personal trainer for 2 times a week for 4 weeks.
Work sites now have gyms to take advantage of for we bitches on a budget.

Giving of ourselves is something that we should all do, especially in times that are so hard for us all. We have all been blessed with different gifts, whether we believe it or not.
I have two girls in college and one who has blessed me with two wonderful grandchildren, so I don't have a lot of extra money to give. For that reason, I give of myself when I can.
I have friends who have children with special needs. They find it very difficult to be around others who don't understand those needs, so therefore, they sometimes become lonely for adult company. Whether it is watching their children for a while so that they can have some free time, or even having lunch or coffee with them and the kids, it is helpful to them, more than we can imagine. At the same time, it is something that I love to do, so I get equally blessed, if not more so. I read to the children or just carry on a conversation with them, or even just watch them play. Children are so easy to talk to and they don't judge, especially if you can try and relate to them.
I know that not everyone has this particular gift, but we all have a gift that we can share. God has blessed us with more than we realize. Use your special gift to bless others, and believe me, you will be blessed!

Used Coffee Grounds for lots of stuff ... Gets the Garlic/Onion smell off of your hands--just scoop a little, squirt of soap & wash hands like normal--smell is gone, hands are smooth--great exfoliator. Can also use it in the shower as an exfoliator. Acid loving plants love to be dressed with the grounds too. I dump the used grounds in an old container & keep it right on the counter next to the sink.

Accountants tend to be pricey. I try my hardest to keep my prices to a minimum. In addition to tax preparation, I also do a plethora of other things, including immigration assistance.

During tax season, I have three low-income senior housing residences that I visit, and I do the tax returns for any of the residents there for free. I also prepare taxes for anyone in residence at our local homeless shelter, regardless of the time of year.

With regards to immigration, there is a petition that can be processed for the battered spouse of a US Citizen, called a VAWA petition. (Violence Against Women Act) Having been a battered spouse, I know the heartache, the frustration and the living in fear that these women go thru. I can't imagine adding fear of deportation and losing your children on top of that. In these cases, I process their applications for about 25% of the normal rate, so that they will be able to stand up in court and fight for their rights - without fear of ICE showing up.
