Our message is simple: enjoying life doesn’t take oodles of dough. Find pleasure in simple daily living. And, food is one of life’s basic pleasures. Great, yummy ingredients + simple recipes= orgasmically good tastes. Eat healthy. We devote an entire chapter in our book to shopping for and preparing great food. Tomatoes, cabbage, chicken thighs, bluefish (don’t be a brat and crinkle up your nose) all are inexpensive and delicious ingredients that are healthy and easily prepared.
We want your recipes. Send us your smart, healthy and tasty favorite meals that use inexpensive ingredients. Remember, there’s more to a chicken than just the white meat (besides, honey, no new breasts for you this year, you’re on a budget remember?).

Mexican Pot Pie, my family loves this one- the kids really dig!
1.5 pounds ground beef, or turkey. I like less fat!
2 tbs ground cumin, garlic salt, pepper
1can diced tomatoes
1 can cream corn
1can beans, i prefer kidney beans- light or dark. What ever you like
Corn bread, prepare batter according to directions
Fry meat, add spices and tomatoes cook for a minute. Add corn and beans, turn into a 13inch baking dish, pour corn bread batter over mixture. Bake according to corn bread directions, just check until done! Serve with a salad, enjoy!
bake 2 chicken breasts (or however many you need) at 375 for 20 mins
remove from oven, top with roasted red pepper tapenade (from a jar!) and crumbled goat cheese
return to oven and bake another 15-20 mins or until chicken is cooked through
serve with broccoli on the side and a yummy salad!
1 1/2-2 lbs. pork butt, cut into 2″ cubes
1 med. onion
1 fresh jalapeno pepper, seeded and sliced
4 lg. strips of peel from 1/2 an orange
1 (12-oz.) can Dr. Pepper or Coke (don’t use diet)
Cook in a slow cooker for 8 hours on low. Uncover. Shred with two forks. Serve with tortillas, Pico de Gallo, and other condiments. Serves 8.
